Just a recipe, but a very tasty one�

Since I had a couple of requests for this recipe (after I mentioned it in yesterday�s entry), I thought I would go ahead and post it here.

I don�t know how this can be called a �light� recipe- it is so rich in flavor. The apple sauce and eggs minus white must be the �light� portion of the recipe. It is very moist, and really doesn�t need any icing (Lease usually just sprinkles powdered sugar on top, once it is totally cooled off).

If you use fresh pumpkin (or winter squash) like we do, it will be extra moist. I think the person who originated this recipe might have used canned pumpkin, so you can go that route too.

Anyway�..

Here it is:

Pumpkin Squares (Light)

2 c All-purpose flour

1/2 ts Salt

1 ts Baking powder

1 ts Baking soda

1 1/2 ts Ground cinnamon

1/2 ts Nutmeg

4 Egg whites + 1 whole egg

16 oz Pumpkin

1 1/2 c Sugar

2/3 c Unsweetened applesauce

1/3 c Vegetable oil

1 ts Vanilla extract

Preheat oven to 350f. In a large bowl, sift together flour, salt,

baking powder, baking soda, cinnamon, and nutmeg. In another large

bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and

vanilla extract. Gradually add the flour mixture to the pumpkin

mixture; beat well. Pour batter into a 9x13-inch baking dish that

has been coated with nonstick vegetable spray. Bake for 30 minutes

or until toothpick inserted in center comes out clean. Cool

completely in pan before serving. Makes 18 generous squares.
