Last night's production- 18 half-pints of jam made out of locally grown white peaches (15 canned and sealed, 3 too many for the canner just capped and put into the fridge) and 7 pints of sliced white peaches in medium syrup ( for the freezer- didn;t feel like water bathing them after the time spent preping the peaches and cooking the jam). The last month has been almost non-stop harvesting, processing and canning of this summer's best. Last week was tomato pasta sauce for the freezer, a big batch of mild salsa, a smaller batch of hot salsa. That was just between Monday and Friday. Should have enough tomatoes by mid-week to make either salsa or sauce again. A killing frost may be less than a month away- that's why I don't complain about the time this all takes every summer. But it's no wonder I haven't had time to go fishing yet this month.....
